Tofu Scramble - Good for Me, Good for Dogs!
Let's see. This was basically thrown together with leftover red peppers, spinach and a bunch of other veggies. I started out by sauteing one shallot, added the leftover veggies, added the crumbled up tofu and cooked that for a few minutes. Then I added about a teaspoon of tumeric, salt, pepper and about a quarter cup of nutritional yeast. That cooked for a few more minutes. I deglazed the pan with a bit of water to get all the nice brown bits incorporated. The dogs got their share (make sure it's cooled down!!) before I added avocado and red chili flakes. Happy tummies all around!

Fake Tuna!
This was lovely! I smashed up a can of garbanzo beans (leave a bit of the bean juice), added a tablespoon of Veganaise, a bunch of fresh lemon juice, added some capers, dried dill - well, this is one of those recipes where you keep having to taste it to make sure it's good. If you do that, I'm sure it will turn out great!

"Chicken" Marsala Attempt #2
This was pretty decent. I pan-fried a Boca Chicken thing and then made a mushroomy, marsala wine thing on top of pasta with a lot of nutritional yeast, olive oil and dried parsley.

Long Life Vegi House and Our Anniversary and Happy Halloween!

First and foremost, HAPPY HALLOWEEN!!
Also, it was my second anniversary (Dave's too. :P). We celebrated at the Long Life Vegi House. We've been going here when we first met at the tender age of 19. Now we are 35 and very mature and sophisticated.
We ordered Hot and Sour Soup, Veggie Spring Rolls, Sweet and Sour Pork, Veggie Mu Shu and Veggie Fried Rice. It was so good!
Their lunch special is crazy good. It's like six bucks and you get soup, a spring roll and an entree. My favorite is the Broccoli and "Chicken". What's strange about the Vegi House is that the decorating hasn't changed at all in the last ten years. Not a bit. I've noticed a few new drinking glasses, but that's all. It's also the kind of place that you suspect to have a back room where they sell opium or gremlins or something.
Cheezy Grits
If I had known how easy and delicious this is, I would have done it years ago! Instant grits made with a few cubes of Follow Your Heart cheddar. It's topped with smoked paprika - it tastes like heaven on grits! That's it. It all came together very nicely. :) "Grits" is a funny word. I like it.
